searching for a recipe

  • Dec. 17th, 2009 at 8:52 AM
Hiya! First time posting, I'm not that good at taking pictures when I bake so it's no fun if i post what I've done >.<'' anywhooo....... I'm looking for something to fill a tiny little tartelette with. I have some almond flour left over since my last failed attempt at making macarons. So i thought i might use that for the "pie crust" or whatever i should call it. But i have no idea what to fill it with.... any suggestions? Oh, and preferrably not too sweet. I'm actually more of a salty person ^^ (if anyone has a nice salty recipe I'd LOVE to have it ;) )

chocolate layer cake

  • Dec. 16th, 2009 at 8:15 PM
I need your best chocolate layer cake recipes. The richer, the better. Hopefully something that pairs well with a buttercream frosting (ie a slightly tart cake), because I don't have the ability to do ganache right now.
I admit this may be one for the Brits in the group!

As the title said I am looking for a recipe for Raspberry Ruffle Tray Bakes.

If my memory serves me right, it is a coconut base mixed with condensed milk (maybe) probably some icing sugar, and here is where I get stuck.. I don't know if raspberry jam is used, or jelly, or what... but it's raspberry flavoured and pink, then put into a tray bake tin or brownie tin, topped with melted chocolate and stuck in the fridge.

Does anyone have a recipe lurking somewhere?

Easy Fruitcake/Icebox Fruitcake

  • Dec. 16th, 2009 at 3:18 PM
I want to make some yummy baked goodies as gifts for some family members. My grandma loves fruitcake and in my recipe search I just came across Icebox Fruitcake. There are so many recipes available however, that I can't decide which one to use. Does anyone here have a highly recommended, trusted Icebox Fruitcake recipe? Or another EASY fruitcake recipe?

Thanks!

Does anyone have a good recipe for soft/chewy cake like molasses/spice cookies with powder sugar frosting on top?

I had a good one from an old cookbook, but it left with my old roommate, and I've been wanting a new one, but can't find a good one!

Thanks!

Vodka recipes

  • Dec. 16th, 2009 at 11:42 PM
Hi this is my first time posting here and I'd like to ask for some help.

I have quite a lot of vodka lying around in my house and I was wondering if it can be used in baking? (Just got a new oven!)
If yes, any nice yet easy recipe to recommend? Most of the liquors recipes I found are either Baileys or Rum.

Thanks a lot!! :)

High Fat No Sugar

  • Dec. 16th, 2009 at 1:29 PM
Hi all,

I'm attempting to woo a Finnish girl who has ankylosing spondylitis and is on a high fat, no sugar, no carb diet.

Can anyone think of ANYTHING in the baking department that might be yummy to make for her? She's not wildly fussy about food itself, so different ideas and flavours are very welcome.

I'm not particularly experienced with making cakes or puddings but am willing to give it a good go.

Thanks

I made my very first Buche de Noel this weekend. It was quite tasty, and amazingly, was a weight watchers version.

I made the cake the night before and left it rolled in the teatowel until I was ready to assemble it.

Cake:
3 tbsp icing sugar
3/4 c flour
1/3 cocoa
1 oz semisweet chocolate (grated)
1/2 tsp baking powder
1/4 tsp baking soda
1/8 tsp salt
3 large eggs
3/4 c sugar
1 1/2 tsp vanilla
1/2 c skim milk

Preheat oven to 375 F. Spray 10 x 15 cookie sheet with cooking spray. Line with parchment paper. Spray with non-stick spray and lightly flour.
Dust a clean kitchen towel with icing sugar and set aside.
Combine 1st 7 ingredients and set aside.
Mix the eggs, sugar & vanilla at high speed with electric mixer until a ribbon forms when beaters are lifted. At low speed, add flour mixture alternately with milk, beginning and ending with flour.
Pour into pan. Spread evenly. bake 8-10 minutes. Invert onto sugared towel and roll up.

Frosting:
8 oz light cream cheese
1 c icing sugar
1/3 c cocoa
1 tsp vanilla
2 oz melted semisweet chocolate (cooled slightly)

Combine 1st 4 ingredients. mix unitl smooth, then add melted chocolate. Beat another 2-3 minutes on high.

Filling:
2 c whipped cream or cool whip (I used ultra low fat)

Unroll cake. Spread topping over, and roll up.Place seam side down on platter.Cutoff a wedge, and put along the side as a branch. Cover with frosting.

Biscotti recipe

  • Dec. 15th, 2009 at 11:23 PM
I am looking for a biscotti recipe with out almonds or almond extract. My sister and I both have an allergy to almonds. It seems all of the recipes out there call for almonds or almond extract. I know I can take out almonds, but does it matter if almond extract is substituted for vanilla?

Chocolate & candy cane whoopie pies (vegan!)

Photobucket

Hi! This is my first time posting here, so I hope I've done everything right :)

I had a bit of a bake-a-thon this evening, trying to come up with something interesting with the guidelines of "chocolate and mint" (and of course, vegan!). Mint around Christmas time immediately makes me think of candy canes, and so these whoopie pies were born. I then realised that the theme for this month's contest was peppermint, so here is my entry!
